Food and Beverage - H.A.C.C.P.
Today’s Restaurant Owners, Managers, and Hotel Food and Beverage Directors must be experts at providing quality service in an era of growing competition, technological innovations, sophisticated clientele and new laws.
H.A.C.C.P. (Hazard Analysis Critical Control Point) is a well established food safety system of hazard analysis which is derived from the NASA space program. In the 1960s, NASA approached the Pillsbury Corporation to develop a system which would ensure food for astronauts would not lead to food poisoning. The system they developed was Hazard Analysis - Critical Control Point or HACCP, pronounced HASSAP.
This system was adopted by the World Health Organization and Food and Agriculture Organization who developed food safety standards known as Codex Alimentarius. These standards have been incorporated into EU legislation under Directive 93/43 and as such will be enforceable in the UK and soon the world. If you have this certification, it will alleviate the fears most Westerners have about getting food poisoning.
